I suppose that OP means in fanarts. In the original manga all the characters are whiter than white. Even Mikasa, the half asian character, has the same skin tone than the Caucasian characters.

Inb4 'manga is always white and black' jokes. I'm talking about the color illustrations.

Even Mikasa, the half asian character, has the same skin tone than the Caucasian characters.

...You don't think this is a strange thing to say? A huge portion of East Asian people (while I know we can't confirm that Mikasa is East Asian, it's kind of obvious) have skin tones similar/the same as Europeans?

Though you may wish her skin tone was a shade different, I think there would be just as many people not pleased with her being "othered" that way and I can see where they're coming from to be honest. If this is how the Japanese author sees his (probably) Japanese character then I think it's a little presumptuous to complain.

I'm not trying to single you out, it's just these "your POC isn't POC enough!" discussions always make me uncomfortable.

Ah no, I wasn't trying to imply that she wasn't POC enough. I was saying that she as a half-Asian person could have had darker skin (a lot of Japanese people have dark skin tones -and there are many that have fair skin tones too, of course-), but she doesn't.

You do know that East Asians aren't actually yellow, right? They have a wide variety of skin tones, but with the sole exception of Northern Europeans and British Islanders, their skin color can be about the same as that of Europeans.

Can be, but usually isn't. And given that light skinned is regarded as more beautiful in many Asian countries, and in some skin lightening formulas are included in so much of the make-up sold that it's hard to find ones that don't bleach your skin, I have to say that I can't disapprove of people wanting more dark-skinned Asians to be portrayed in media.
