I haven't watched Hannibal so I couldn't comment. As for Ramsay & Theon, I do think that the relationship (or at least Theon's/Reek's arc) is somewhat interesting in the books, but the show have been quite shaky in their handling of it. The psychological torture of the first few episodes (letting him escape and bringing him back) was alright, but the black-comedy-with-occasional-naked-ladies mixed in with the horrifying physical torture and mutilation was just gross.
