Jedi Apprentice level of writing is pretty basic, it is aimed at young kids after all. (you should see the Junior Jedi Knights!) Buuut when you're a kid they're great, all my brothers were so excited as kids when they could read 'chapter books' about Star Wars.

Many of the books are AWESOME and many of them suck, if you wanted to give it a try you can't go wrong with the Thrawn Trilogy by Zahn and the X-Wing series by Stackpole and Allston.

yeah, it can be intimidating! I tell everyone that their starting place should be the Thrawn trilogy though (Heir to the Empire, Dark Force Rising, and...help I forget....). Tt was the first...not sure how to articulate. The first SW book was the bizarre and accidentally incestual Splinter in the Mind's Eye, the first one in continuity is Truce at Bakura, which starts pm right after the end of ROJ, but the Thrawn Trilogy was the first time people went OK LET'S DO THIS EXTENDED UNIVERSE THING; it elaborated a lot on the movies, added some characters that became universe standbys, and on the whole kept the 'feel' and characters of the movies totally intact. You can almost hear the soundtrack as every one starts with a shot of a Star Destroyer gliding through space, lol

"The Last Command". I mostly remember that because of the implications it had in the story.

I was unimpressed by "Truce at Bakura", and the "The Courtship of Princess Leia". The only saving grace the latter has is it gave an interesting background to Tenel Ka, who was a great character.
