The only series I've really watched is Voyager and the reboot movies, with the occasional passing episode from other series. Any book recs based on that?

Kirsten Beyer's Voyager novels are great. So are Christie Golden's (my personal favourite of hers is Seven of Nine, but that might just be because I'm a Seven fangirl).

Also: If you have any interest in Romulans, Diane Duane's Rihannsu series is a must. Actually, any Star Trek novel written by Diane Duane is worth reading.

+1 to these recs! Especially Christie Golden, I love her tie-ins--she's great at accurately portraying the characters.

you didn't say if you're into TOS at all, but along with the Rihannsu series I highly recommend the Janus Gate trilogy; some good solid sci-fi, and the characters are a great representation of the TOS crew early in the run.

Diane Duane, Peter David, J. M. Dillard, Vonda McIntyre, Greg Bear wrote one (or two?), those are the names to keep an eye peeled for in used bookstores.

Seconding the Rihannsu series. Also Dwellers in the Crucible, if you want more backstory on Saavik. For perspective on Vulcans, start with the two-book series Battlestations and Dreadnought. Strangers From the Sky and Spock's World were written before Star Trek VI (*spit*) but still hold up nicely as AU. (Or, you can do like most of us, and pretend the even-numbered movies don't exist.) More Vulcan-centric (yeah so I'll never forgive the reboot for blowing up the planet) The Vulcan Academy Murders and The IDIC Epidemic both of which feature lots of Sarek and Amanda, which is always awesome.

Also Yesterday's Son and Time For Yesterday. It's a totally fanfic cliche, but totally done amazingly well.

If you're more into exploring the other members of the crew, Doctor's Orders (McCoy in command of the Enterprise! My fave line: "I have time for a sandwich? During a BATTLE?"), and Uhura's Song, just to name two off the top of my head.

you can do like most of us, pretend the even-numbered movies don't exist.

I can honestly say that you are the first fan I have met who is fine with the existence of Star Trek V but apparently has no love for, say, Star Trek II. And what on earth is wrong with VI? Moat of the fans I know take the view that (at least for the TOS characters), the even numbered films were best.

That said, "Spock's World" is indeed awesome, so I guess we can agree on something.
