Not sure about her being the most interesting character ever written, but I do like her a lot. I like that while she very initially appears as if she might be the stereotypical female character of the group who is regulated to being the kindhearted and nurturing one, she is also quickly shown to possess a hot temper and a lot of anger and prejudice rooted in the fact that her mother was murdered. I think favorite katara centric episode is the one where she tracks down her mothers killer and while I don't think anyone actually expected her to kill the guy like zuko encouraged, she also didn't offer him forgiveness like aang urged. Often in a situation like that, the writers would choose to have the hero nobly offering their forgiveness even to someone who had wronged them horribly, so I liked that they showed katara dealing with it her own way.

I actually was fairly annoyed at that one. It was mostly at Katara telling Sokka that he didn't love their mother as much as she did because he didn't want to get needless revenge and telling Aang, the boy whose whole culture, friends, and family were wiped out, that he didn't understand what it's like to lose someone he loved. I get that she was angry, but I don't think she ever apologized to them or realized how shitty it was to say something like that.
