Well, I agree that we shouldn't expect realistically portrayed animals in Disney movies, but the "All animals are dogs" gets a bit old...

I would normally agree except I found it kind of fit with Sven, because from the impression I got, Christof raised him, so while yes his 'dog-like' qualities were surely over-exaggerated in the film, it probably wouldn't be too out of character for an animal raised as a pet to be well... acting like a pet.

Buy why does "acting like a pet" always equal "acting like a dog"? Wouldn't it have made more sense for Sven to act more like a pet horse in this case?

That I can't answer, I have no idea how pet horses act. XD I'm guessing the designers/writers assume 'pet dog' is more relatable than 'pet horse' and 'pet cat' wouldn't work at all.

This. Why is the default "Friendly Animal Behavior" always to stick their tongue out, pant, wag their tail, prance in circles for attention, fetch, and point like a trained birding dog - regardless of what species they actually are?

Well, I loved Sven because he acted exactly like my rabbit, so I guess my rabbit acts like a dog! I don't know where she picked that up from, though, seeing as she's never met one.
