I like up to around 70%, though in smaller doses the higher you go. Don't try high cocoa content mochas, though. My sister got a 60% dark chocolate mocha with espresso, and was literally shaking trying to cross the road.

The same sister and I bought a 98% bar once, from the same chocolatier, just to try it. We could literally only eat like a shaving of it at a time. Our uncle, who can be a bit of a hardcase sometimes, came in and decided he was going to prove how tough he was, and took a great massive bite of it. He promptly gagged and downed half a litre of Coca Cola trying to wash the taste out. Best. Moment. Ever. We were saying 'I told you so' for the next year.

How makes bars that high?

I think I can handle 34% at the most.

Well, this was a local chocolatier (I'm in Ireland), but I think Lindt do high 90s as well?

Also in Ireland here.

Yeah Lindt is like 85%. But it always tastes very cocoa-buttery to me. Not overdark at all.

I like it but not as much as Green & Black's Maya Gold (orange & spices dark chocolate) or Ginger (though that's a bit sugary for me sometimes).

Yeah I've had up to 97% specialty chocolate. It's interesting. The 40s-60s range is the best delicious zone.

At 98% was the last 2% sugar? It can't have been nice. I am doing an 8 week no-sugar thing at the moment and tried cacao nibs, which are fermented cocoa beans just before they're turned into chocolate, and ... it tastes like greasy sour bitter dishwater. I keep trying and trying since I LOVE dark chocolate and I'm so desperate, but UGHHHHHH.
