Like people above said, veggie heavy stir frys are good but try and season them with spices and not sauces or at the very least read the nutritional panel if you buy the sauce pre-made. You can easily undo the point of a stir fry with an unhealthy sauce.
Hummus is cheap, tasty, and pretty easy to make at home. To save money you can sub the tahini for peanut butter, a lot of people I know prefer it like that. Hummus is really tasty in wraps with spinach, onion, and tomato. Or you could get a little box of tabbouleh or couscous, mix in some cucumber, spinach, tomato, onion, and a little feta then top with hummus and you have a tasty cold work lunch.
Overwhelming your dishes with vegetables is really the best way to go no matter what you make.
If you have a microwave at work I like to broil chicken, onions, and tomatoes drizzled in a little Italian dressing and dump them over a small amount of noodles. Another thing I like to make that seems to hold up in the microwave is grated carrots, onions, and frozen spinach sauteed with a little barbeque sauce in a lightly fried (olive oil and patted down with a napkin) tortilla shell. It might sound weird but it is tasty and you won't really miss the meat.
Warm soups tend to feel more filling per calorie to me so I recommend looking up healthy vegetarian recipes (you can always add a bit of chicken if you really want it).
Oh and juice might seem healthy but it is a real calorie sink so watch out for that. :)

(Anonymous) 2014-01-31 04:56 am (UTC)(link)Consider oatmeal for breakfast, to which you can also add fruit. It's filling, inexpensive, and reduces risk of heart disease. If you use quick-cooking or old-fashioned oats, it's also really fast to make, a couple minutes in the microwave and you're good to go. Adding almond milk to that would also work.
