I'm curious about how pairing Hermione and Ron was wish fulfillment for her.

Ron was supposedly based on a man she used to have a relationship with, so the impression I got was that it was wish fulfillment in the sense of that relationship working out.

Wasn't the Ron-inspiration supposed to be an old male friend rather than an ex? But still, yes, I think there might have been feelings there that bubbled up through fiction.

In a 2002 interview (I think it was on A&E) she said that hermione had a lot of basis in herself as a child and that Ron was based (to an extent) on her best friend Sean Harris (who was also in the interview. they looked kind of cute together tbh)
