The X-Wing novels. Go forth and read them NOW. They're the best of all the EU books imo. The "series" is actually more of two smaller series that intertwine a bit; books 1-4 are by Michael Stackpole, 5-7 are by Aaron Allston (my favorite SW author), 8 is by Stackpole again, and 9 is by Allston. The books run chronologically 1-9, but 1-4 and 8 are part of the same plotline which is not the same as 5-7 (it's hard to explain without giving away a large part of plot, but it makes sense when you read them), and 9 is basically a standalone. The series' main protagonist is Wedge Antilles, who you may remember from the movies as one of Luke's fellow X-Wing pilots---this series is mainly about his piloting exploits and those of his squadmates several years after RotJ. There's a surprising amount of world-building, as it were, and the Star Wars-verse gets more depth to it, but the books are really character driven and I think that's a big part of what appeals to me about them. Wedge is my favorite SW character and when I was 14 I wanted to be just like him, lol.

I'm the anon that rec'd them, and I say thanks for expanding on why they're good!

(also omg it's not only me for whom AA is the #1 fave??? I mean I love love love Zahn, but Allston's books have given me a huge amount of laughs over the years, and my family quotes lines at each other all the time [Yub yub, Commander]. I don't like the NJO overall but he managed to write in that universe and actually still make it fun instead of just depressing.)

I'm going to chime in and say if you don't want something focusing on the Skywalekrs and Jedi, the X-Wing book series is by far by favorite. It's a toss up between Stackpole and Allston, but I really love both of their books. Of all of the books in NJO, Stackpole's and Allston's were my favorite.
