People name their babies (and their sketch characters) crazy shit for all kinds of reasons. I don't think their ability to spell is always the issue. Maybe it was spelled "correctly" (by your standards) in the script for the original sketch and they just went with the fan spelling going forward? Point is, it's not misspelled. His name is Stephon with an O and that's all there is to it.
