Her death also allowed the film to conclude with the stinger of Loki-as-Odin usurping the throne, yet not leave viewers wondering, "So, wait, is Loki going to have sex with his mom?" So her death really performed two narrative functions, rather than just one.
Otoh, I still think they could and should have gotten around that. Hell, they could've just had her be grievously wounded and put her in some sort of medical coma projected to last a century or something; that would still be motivation for her sons, and allow them to avoid unfortunate implications with the Loki-as-Odin ending, but also be slightly less gross than killing off a major sympathetic female character when, in the same films, multiple sympathetic male characters (Fandral, Thor, Loki...am I missing anyone?) have been apparently mortally wounded and survived.
