I have no interest whatsoever in Sue!fic, but some of my favourite fics are canon character/OC. In the hands of good writers, it's a fabulous way to explore the individual canon character outside of the normal paradigms of their relationships with other canon characters. I love my otps, but a lot of the fic for them treads the same paths, or makes their relationship the absolute focus of the story when there are far more (in my mind) interesting mechanisms available. Good OC fic, in my experience, provides more freedom from that.

Plus there are some fandoms where there just aren't any canon characters that go with with the particular character I want to read about.

I don't suppose you could provide some examples?

Also, do you mean in fandoms where there is no canon pairing for the canon character in question?

And if so, are said characters usually the main protagonists or secondary or minor characters in the original canon material?

Oh, and, just noticed the second part of your comment (responded with the recs in a bit of a hurry).

Not so much lack of canon pairing, although that's certainly part of it, but also canons that just don't have a lot of characters even for non-canon shipping. For eg, I adore and would love to read fic for a certain character on a local family drama, but ever single other character is either one of his family members, or their partners. I love gen, but fics that pair him with an OC are another way of looking at him again.
