Unless you love Player vs Player environments I would stay the hell away from the PvP servers, I imagine at max level(and in the best PvP gear) they aren't so bad, but while you're leveling it's not fun getting killed by max-level players over and over again.

Hunters are a good choice of class if you want something familiar to start off with, they're relatively hardy too and are pretty user-friendly.

Personally I love playing Night Elves, Draenei, and Worgen on Alliance and Blood Elves, Trolls, and Goblins on Horde. Also Pandaren as well but you can choose which side they go to. But you may very well have a different preference, I'd suggest playing around with the character creator for a bit and finding a race/class combination that appeals to you.
