Unless you want to play PVP, I'd recommend Proudmoore. It's the LGBT server on the American/Oceanic side servers, which [as Deathtoll [sp?] mentioned] means that jackasses tend to be slapped down and policed more than on other servers.

Alternatively, if you're interested in RP at all, Wyrmrest Accord. My gfs and I play there primarily; one of my gfs actually rolled on Proudmoore and was shocked at the amount of anti-LGBT she saw in the chat channels. On WrA, we are able to keep trade and other channels (on Proudmoore, she had to turn all channels including /say off in the cities) on because if someone is a douche people WILL stand up to the jerks. I don't know if Proudmoore gets enough trolls that they just ignore it, or what, but it really soured her on the server. :(
