Eric tortured Lafayette because he was smack in the middle of the vampire blood trade. He killed Talbot for revenge against Russell, the best villain the show has had who, yes, Eric eventually killed, because he was the BEST VILLAIN THE SHOW HAS HAD. He killed Steve Newlin because he helped poison Eric's sister, which led to her death. These are gay characters who have had been important to the show and it's plot. Of the four, all but Talbot lasted several seasons, Lafayette for the entire series run. They're savvy, dangerous, interesting gay characters, who pull the kind of shit that eventually puts them on the radar of one of the most dangerous characters on the show. That's why they're dying or being tortured. The same actions that put on them on that radar kept them actively engaged in the plot. Why is this a bad thing?

He killed Steve Newlin because he helped poison Eric's sister
eric's sister was poisoned because he turned the governor's daughter into a vampire and taunted him about it.
and steve newlin only told them about his sister because they threatened to torture him if he didn't give them information about eric.
eric is more to blame for her death than steve was.

And though he tortured La, he didn't tear him apart the way he tore that redneck apart that was chained up with La - the non gay one? In fact, after he freed La and forced him into his business, he gave La a car and protected him a time or two from other threats, as well as letting La partake of V through his vein.
eric's sister was poisoned because he turned the governor's daughter into a vampire and taunted him about it.
And he turned the gov's daughter into a vamp in a misguided attempt to get the gov to STOP murdering vampires - as the gov was a bigot who thought the only good vamp was a dead one.
and steve newlin only told them about his sister because they threatened to torture him if he didn't give them information about eric.
This makes Steve less culpable, then? Steve spent most of the last season turning on the other vamps for a chance not to be really dead, after spending his life trying to obliterate them. Do you really think Eric is going to take into account the fact that Steve was 'threatened' into talking with the possibility of torture? Have you spent more than five minutes of the show watching Steve Newlin? He'd have sold the information for a bag of blood.
I'm not any more of a fan of Eric's than of Bill's or of Alcide's or any other hot supernatural guy on the show. But these are vampires and humans who do both good and bad things. Holding one more responsible than another is just...well...stupid.

Eric is bad for torturing and killing people for dealing V, when he's doing it himself.

Actually, the guy who Eric killed told Lafayette he let a guy give him a blowjob before, so I don't think he was entirely straight either.
And the point is, if Eric is dealing V himself, he shouldn't be punishing other people for doing it.

And then he proceeded to rub the salt in the governor's wounds, telling him "Are you mad that I turned your daughter into my daughter?"
Furthermore, he was stupid for sending a newborn baby off on her own, and in the end he only made things worse. At the very least he should have commanded her not to attack anyone.
Not to mention his original plan was to rape and murder her, until she convinced him not to.

And are you denying that he was threatened with torture? Watch the scene again, he pretends not to know who Eric is until the doctor pulls out the instrument.
Furthermore, is Eric any better when it comes to turning on vampires? He knew that the plan was for Warlow to give the imprisoned vampires their blood to save them from the sun, but he drained him anyway so he could go there himself and get revenge. He cared more about his vengeance than he did saving their lives.
