Well, we saw how Kirk reacted. Severe, bone-deep pain and loss, but accepting the support of his other friends and Starfleet as an institution. He'd honor Spock's memory forever, and never really get over it, but he'd go on, indomitable.
Spock, if Kirk had died early, would withdrawn into himself and become the perfect, ice-cold, ultra-Vulcan for the rest of his life. He would never, ever allow himself to make bonds or open up to human ideas again. But, we do see Spock post-Kirk's death when Kirk is getting up in years -- we only see him decades post-Kirk's death, and he's stolidly workaholic, dedicated to a specific cause, quite evidently caring and involved in the world. He's doing okay. It appears to Spock and everyone else that Kirk dies while saving the Enterprise B from a freak accident. I think Spock could appreciate and accept this, given how he himself died. And I like to think that, since McCoy is still alive in TNG, that he and Spock were there for each other, in their typical gruff unspoken way, through the following years.
Starsky & Hutch:
They would commit suicide. I don't see how either of them could ever go on for long without the other. One of them without the other is not a full person, he's a crippled horse who needs to be shot and put out of his misery.
