Okay, here's a list:

The Souls series, yes -- but also King's Field: The Ancient City, another From Software joint for PS2 and now semi-rare.

If you like more traditional action games, Heretic is effectively Doom with a fantasy flavour, Hexen is a nice twist on the formula and plays rather different, Hexen II is fantastic (and pretty gorgeous for a Quake 1 engine game!) and Heretic... I have not played but it's apparently in third person.

The Thief series -- yes, that includes the new one -- are effectively fantasy steampunk first person stealth games. My personal favourite is Thief Gold (updated version of the original and the only one most digital distributors sell) but Thief 2 has hundreds upon hundreds of fan-made levels and Thief 3 has the Cradle.

Legend of Grimrock, if you like traditional grid-based first person dungeon crawlers in the vein of Dungeon Master.
