- meatless quiche, self explanatory
- broccoli salad (chilled cooked broccoli sauced with tomato puree, soft cheese and chopped hardboiled eggs)
-conchita hot beans (runner beans, tomato ppuree and fresh chilli)
- potatoes, anything potatoes.
- gardener's salad (mushrooms, carrots, onion, green pepper, tomatoes, orange)
- veggie casseroles
- oriental salad - bean sprouts, red peppers, lemmon juice, soy sauce, those crinkly noodles sprinkled on top
- poached cuccumber
- crumbed eggplants with sides of veggies/potatoes
- skewered veggies
- veggie stir frys
- buy vegetarian meatballs/patties and have usual veggie/potato sides
- buy pre-spiced/herbed tofu and hope she knows how to cook it.
Actually anything with beans are good, my experience has been most vegetarians get sick of tofu real fast.

I got sick of stir fry and pasta primavera real fast, because those were (and still are in a lot of cities) my only choices in restaurants. Tofu not so much.
To the OP:
Indian and Middle Eastern cuisines tend towards easy vegetarian. Soup is always easy and delicious, too.

Or better yet a friend of a friend is blowing a gasket on tumblr today because she found out her vegan friend has been eating fish the entire time.
Which is funny cause I'm the opposite, I'm the average diet I guess but I won't eat seafood*.
*unless necessary, not going to starve myself.

Seafood is so hit or miss - you either love it or hate it. (Or in some cases you're allergic to it.) I've always loved it and don't have the same level of ethical objection to it as I do to red meat/poultry. I would like to eventually get more picky about where I get seafood from and make sure it's sustainable (because it can be terrible for the environment) and focus a bit more on plant-based proteins, as well as switch to only local, humane sources for eggs and milk. But right now I have a college kid's budget for money and time, lol.
Anyway, yeah, pescetarian. But I eat a lot of vegetarian food, obviously, so I kinda like this thread too and might find some new things to try :3
