vegetarian recipe's

My sister is coming over and she has recently become a vegetarian. Does anyone know anything I can cook for her? Preferably easy to make.

Ok, cool. Here's some food ideas (they're in my actual books so you'll have to look some up):


- meatless quiche, self explanatory

- broccoli salad (chilled cooked broccoli sauced with tomato puree, soft cheese and chopped hardboiled eggs)

-conchita hot beans (runner beans, tomato ppuree and fresh chilli)

- potatoes, anything potatoes.

- gardener's salad (mushrooms, carrots, onion, green pepper, tomatoes, orange)

- veggie casseroles

- oriental salad - bean sprouts, red peppers, lemmon juice, soy sauce, those crinkly noodles sprinkled on top

- poached cuccumber

- crumbed eggplants with sides of veggies/potatoes

- skewered veggies

- veggie stir frys

- buy vegetarian meatballs/patties and have usual veggie/potato sides

- buy pre-spiced/herbed tofu and hope she knows how to cook it.

Actually anything with beans are good, my experience has been most vegetarians get sick of tofu real fast.

I hate that when people eat fish and still want to be called vegetarians. Fish are not vegetables! Damn.

I'm a pescetarian, and I sometimes use "vegetarian" for convenience because so many people don't know what "pescetarian" means (and it kinda sounds pompous). But I don't pretend to be an actual vegetarian if people ask me about it. I agree that there is an important distinction.

A vegetarian who eats fish is a pescetarian, not a vegetarian.

(I mean sometimes I say "vegetarian" if someone offers me chicken or w/e. Just being pedantic. sorry)

Nah it's fine, it's just I've met too many people who will insist they're completely vegetarian then eat fish ...as opposed to going "I'm pretty much vegetarian but I eat fish!"

Or better yet a friend of a friend is blowing a gasket on tumblr today because she found out her vegan friend has been eating fish the entire time.


Which is funny cause I'm the opposite, I'm the average diet I guess but I won't eat seafood*.


*unless necessary, not going to starve myself.

It's just tomatoes, butter, onion and salt, plus the pasta and grated cheese you add at the table.

Find out if she's a vegan or not. Either way, I suggest beans. Try a chili or something. Kidney beans, tomatoes, onions, chili powder... delicious for vegetarians and non vegetarians alike. Serve with garlic bread or rice or something. There's a lot you can make that doesn't have meat.

Could also do like, cheese/veggie pizzas.

If she's okay with eggs and dairy products, a simple egg and cheese omelet (you can also add mushrooms) is good. In the U.S., asparagus is coming into season and that'd be a delicious vegetable side dish.

It doesn't grow in my area either, but the grocery stores near me have this practice where they ship produce in from other parts of the country where they're grown. Do your stores not do that?

Super easy:

big package of tortillas
can of vegetarian refried beans
grated cheese
salsa

You can do bean and cheese burritos, or cheese quesadillas. Even easier are Tasty Bite Madras lentils, they come in a foil packet and they're heat-and-eat. Serve over rice, they're really good.

All are fairly easy!

Another favorite: cook up some grain (any grain! Quinoa! Rice! Israeli couscous (not technically a grain but close enough)!), top with roasted vegetables (I like butternut squash or sweet potato plus cauliflower and fennel, but truly anything will do) and some sort of greens (I love kale), add avocado and tahini sauce (tahini, vinegar, hot sauce, and water), and devour.

Also spicy peanut noodles-- cook up some long thin pasta (I usually use thin spaghetti, but really any kind will do. Soba noodles also work great, if you can find them!). In a frying pan, fry some broccoli in hot oil so it gets slightly burnt and crunchy in parts. Mix up a sauce of peanut butter, hot sauce (sriracha's a favorite), cider vinegar, soy sauce, and water. Combine and consume. I'll sometimes add in some fried tofu as well.

Probably easiest is pasta. Pasta bakes are great! Just cook up whatever vegetables you have (it's really very forgiving), and add pasta sauce and pasta and maybe a little cheese. Throw it in the oven, and you're golden!

Stratas are also very easy. Cube up some old bread, mix in whisked eggs with milk, whatever cooked veggies you have on hand, and a little cheese. Bake at 350ish for 30-40 mins, or until it looks particularly delicious, and consume.

A lot depends on how much time you have/are willing to invest. If you have any guiding directions (favorite/least favorite foods), let me know and I'll put some stuff together! I love cooking and helping people find new recipes :) (and I've been a vegetarian for years, so I'm mostly familiar with that!)

My go-tos are stuffed peppers and vegetable lasagne (if she eats dairy), and I basically use the same things for both - mushrooms, onions, garlic, tomatoes, courgettes, carrots and bell peppers. Plus sometimes a bit of brown rice for the peppers. Nom nom nom.

You've had some great suggestions so far, but I'd just like to add, where cheese is concerned you have to make sure it's specifically labelled 'suitable for vegetarians', or that the ingredients list it as containing vegetarian rennet. If it contains calf/kid/other baby animal rennet, it's not okay for vegetarians to eat.

Vegetable soup (with potatoes and/or beans), pasta with veggies (there are so many good veggies to do this with and it's super easy and delicious), roasted veggies/bread/potatoes/salad or something, omelettes, pizza, veggie burgers (homemade black bean burgers are amazing), etc. Tons of ethnic foods - a few that come to mind for me are hummus, falafel, sushi, and gazpacho - a random list, but all are ethnic foods I like that are vegetarian or have vegetarian versions. Fruit salad also makes a good, refreshing side. Tossed salad with homemade vinaigrette or homemade dressing is yummy. One of my favorite side dishes is roasted cauliflower. I have a pretty good very simple recipe for that that doesn't require any special ingredients, if you'd like it. Good luck :)

I love quinoa and would recommend a quinoa salad.

Make the quinoa according to package directions and let it cool completely. dice any of the following and add to the cooled quinoa: red, yellow, orange bell peppers; radish; celery; cucumber; cherry tomatoes; handfuls of flat leaf parsley; mint; celery leaves. Dress it with olive oil, red wine vinegar and lemon juice. You'll have to experiment to see how much acid you want. You can serve as is, over a bed of arugula, or hollow out a bell pepper and serve it that way.

You could make dal with lentils too. Yummmmmmy.

I'd say any soups and stews, pile any and all vegetables in you have. Vegetable soup can take almost anything and everything, though I personally say be wary of using tomatoes if you don't want the tomato flavour.

Do encourage her to check out whatever meat substitutes are available. These days there tends to be quite a few good ones available. I'm Australian, and grew up with the Sanitarium Healthfood Company (who is best known for Weet-Bix) and their meat substitutes, like Nutmeat, Nutolene, Tender Pieces, Casserole Mince. Things like that you need to be careful with if you have a peanut or gluten allergy.
