All are fairly easy!
Another favorite: cook up some grain (any grain! Quinoa! Rice! Israeli couscous (not technically a grain but close enough)!), top with roasted vegetables (I like butternut squash or sweet potato plus cauliflower and fennel, but truly anything will do) and some sort of greens (I love kale), add avocado and tahini sauce (tahini, vinegar, hot sauce, and water), and devour.
Also spicy peanut noodles-- cook up some long thin pasta (I usually use thin spaghetti, but really any kind will do. Soba noodles also work great, if you can find them!). In a frying pan, fry some broccoli in hot oil so it gets slightly burnt and crunchy in parts. Mix up a sauce of peanut butter, hot sauce (sriracha's a favorite), cider vinegar, soy sauce, and water. Combine and consume. I'll sometimes add in some fried tofu as well.
Probably easiest is pasta. Pasta bakes are great! Just cook up whatever vegetables you have (it's really very forgiving), and add pasta sauce and pasta and maybe a little cheese. Throw it in the oven, and you're golden!
Stratas are also very easy. Cube up some old bread, mix in whisked eggs with milk, whatever cooked veggies you have on hand, and a little cheese. Bake at 350ish for 30-40 mins, or until it looks particularly delicious, and consume.
A lot depends on how much time you have/are willing to invest. If you have any guiding directions (favorite/least favorite foods), let me know and I'll put some stuff together! I love cooking and helping people find new recipes :) (and I've been a vegetarian for years, so I'm mostly familiar with that!)
