I'd say any soups and stews, pile any and all vegetables in you have. Vegetable soup can take almost anything and everything, though I personally say be wary of using tomatoes if you don't want the tomato flavour.

Do encourage her to check out whatever meat substitutes are available. These days there tends to be quite a few good ones available. I'm Australian, and grew up with the Sanitarium Healthfood Company (who is best known for Weet-Bix) and their meat substitutes, like Nutmeat, Nutolene, Tender Pieces, Casserole Mince. Things like that you need to be careful with if you have a peanut or gluten allergy.
