If she's okay with eggs and dairy products, a simple egg and cheese omelet (you can also add mushrooms) is good. In the U.S., asparagus is coming into season and that'd be a delicious vegetable side dish.

Sorry, but I started laughing at the thought of asparagus coming into season in my part of the U.S.

It doesn't grow in my area either, but the grocery stores near me have this practice where they ship produce in from other parts of the country where they're grown. Do your stores not do that?
