Re: vegetarian recipe's

Vegetable soup (with potatoes and/or beans), pasta with veggies (there are so many good veggies to do this with and it's super easy and delicious), roasted veggies/bread/potatoes/salad or something, omelettes, pizza, veggie burgers (homemade black bean burgers are amazing), etc. Tons of ethnic foods - a few that come to mind for me are hummus, falafel, sushi, and gazpacho - a random list, but all are ethnic foods I like that are vegetarian or have vegetarian versions. Fruit salad also makes a good, refreshing side. Tossed salad with homemade vinaigrette or homemade dressing is yummy. One of my favorite side dishes is roasted cauliflower. I have a pretty good very simple recipe for that that doesn't require any special ingredients, if you'd like it. Good luck :)
