I agree about Aang/Katara. He had moments of wisdom and insight but he still felt like an immature kid, where she felt like someone who had to grow up too fast and had a more mature outlook. I was really soured on them during the Ember Island episode where he kept pushing and she was clearly uncomfortable. Considering the Ember Island episode was just before the final four episodes, this was the last concrete impression we have of their relationship before they end up together at the end. We're never told what she's thinking or how her mind was changed, so the kiss doesn't feel justified for me.

But long-term, I don't think they would've worked. In some ways, I feel that Legend of Korra has shown what concerned me. Aang proved again and again how important his spiritual path was to him. He even learned that letting go of Katara was the best way to keep her safe. He's the only one left of his people; it's his responsibility to make sure his way of life isn't lost. His ideals are very important to him. All of this makes me feel that he was just going to go further and further down a spiritual path where he has to detach himself from the world.

Katara, on the other hand, is very concerned with the world. She is very attached. Even if she could follow him on a spiritual path, I don't think she would. If you look at the Southern Raiders episodes and how Katara and Aang approached the subject of vengeance -- they just seemed on very different wavelengths. Now, possibly this could've been used to make a stronger partnership -- he could bring calm and wisdom to her, and she could bring passion and perspective to him -- but I just didn't feel like that was very likely. How their kids turned out seems pretty spot-on from what I was seeing in the two of them as kids.
