I figured things out basically do the same thing that you're doing: I went to a place that had a "Make Your Own 6-Pack" section and went crazy. It's basically just a lot of trial-and-error. And, of course, the larger a selection a place has, the more fun and useful your adventuring is going to be.

I've found over the years that I really enjoy IPAs, abbey ales, and nice, thick, chewy stouts and porters. Lagers I generally do not like at all; they taste like lightly flavored water half the time.

My absolute favorite beer no longer exists: Riverhorse's Oatmeal Milk Stout. I have never tasted anything so delicious, and now I fear that I never will again. :(
