For example, Xian (back then known as Chang'an) is home to the Great Mosque of Xi'an, built during the Ming Dynasty. One thing the Wikipedia article didn't tell you is that the inside walls of the prayer area are carved with Quranic scriptures. I visited that place many years ago and still the most memorable thing about that place was the carved walls.
The Ming Dynasty was also had the Hongwu Emperor who wrote the Baizian or The Hundred Word Eulogy, a sort-of poem praising the Prophet Muhammad and his virtues. Then there was the Yongle and Zhangde Emperors who were really interested in Islam (though in Yongle's case he wanted prestige and back then, most of China's traders and trading nations were Islamic, hence his interest with Islam).
Also, Zhang He. He was a eunuch who became and admiral and traversed the seas to increase China's prescene in the Indian Ocean decades before Colombus or Da Gama. He sailed with his fleet all the way to Arabia and Africa, bringing back goods and even mammals back to China.

For example, the Chinese back then considered most outsiders as "barbarians coming to the Celestial Empire" , but yet they view the kingdoms of Malaya and Sumatra with almost equal respect and friendship compared to Europe. Another example is how the trading of spices in those Malay kingdoms would jack the prices of Indian pepper in Venice to extreme heights, angering Spain and Portugal.
Also, can I just say that I really want to see what will happen if a western numb-nut "discovers" the Chinese-Muslim connection and going all "BLARGH!" about it?
