IA, the daemons were the most interesting part of HDM and the main reason I liked the books. (The ones that I read, anyway. I never did finish the last one...)

Same and I finished them. ALSO, BEARS. Also, the knife was kinda cool. The plot got boring pretty quickly though.

Hmmm... none that really stand out. Mostly I just browse what's on AO3. You have good and bad but nothing spectacular is coming to mind.

There's a nice Avengers/HDM AU on AO3 somewhere that I don't have time to find right now. Tony Stark and healing and all the issues that his captivity entails for demonology, iirc. Pretty sure his daemon was a snake.
