the original 'saw'
it's gory and violent and repulsive and it doesn't pretend to be anything more. the atmosphere is just the right level of tense; it makes you sweat and gives you goosebumps but it's still very watchable. the detractors of the franchise have blown the level of gore out of proportion (though it increases in the last movies); the violence is suitably offputting but not puke-inducing.
the story is surprisingly good for an almost straight-to-dvd horror film, with a nice twist at the end. it keeps you guessing who the killer is (or second-guessing your guess) right until the end.
and the casting is... well it's pretty random, but i think it's the movie's greatest strength. i mean, danny glover, ned bellamy, ken leung and michael emerson, together, in a horror film? it shouldn't even work, but it does. somehow.

more seriously, saw isn't as dumb or shallow as some people say it is. it's a horror film so the plot and dialogue aren't exactly oscar-worthy, but it still holds up pretty well.
