I am a very tired Brit who was raised by Americans, so I store my eggs in the fridge like an American even though I live in Britain.
Is this saying that I should store them outside the fridge like everyone else here does?

The article talks about how each country processes the eggs and how it's the opposite of the other country. Basically, the USDA requires washing and drying under specific conditions before selling and England requires them not to be washed at all.

Since they're refrigerated at the store, you kinda have to. If you have your own chickens/get them from the Amish/whatever like that, you don't have to.

Does them being refigerated in the store make it impossible to store them out of the fridge at home? *curious*

They're not refigerated in the shops in the UK. We just keep ours on the side at home.

Basically, since they're washed and that protective 'cuticle' layer is stripped away, if you let them get warm, they get condensation on them, which makes it easier for bacteria to collect/penetrate the now-undefended shell.

So - 'farm fresh' eggs generally haven't been subjected to the crazy washing procedure we do (omg! chicken poop!!!!), so they don't need to be kept cold like heavily washed and therefore 'susceptible' store eggs.

Obviously, eggs keep longer in a cooler/cold environment, but still...the whole washing thing is a little nuts.
