Aren't those called Walkthrough's and considered separate from Let's Plays where they do talk?

I wouldn't know. All I know is they don't fucking talk over the game and ruin it with their obnoxious voice and shitty jokes and -- if it's even remotely scary -- high-pitched shrieking.

ayrt: I think they might be separate. I've noticed I tend to get more non-talking videos when I search with the word "walkthrough" and more talking ones when I search with "let's play" so I just figured they must be two different things.

Maybe you could start searching with "walkthrough" so you can avoid talking ones?

I think of Let's Plays personally as any format where you can visually "follow along" through a whole play-through and there's explanation/commentary throughout in any format. lparchive has LP's ranging from simple key screenshots interspersed with text paragraphs to full video with dual narrators. (I tend to like either the screenshots with occasional links to cutscenes or videos with text superimposed, and can only think of one talking LP I've really liked offhand.)
