That's Hollywood for you. Tyrion's also supposed to be ugly and Dinklage is pretty much hot.

That being said, she's way above average height or a woman, and has spoken about how it was annoying how that always defined her - how she was recognized for her height, and now she's recognized for her role. Which I think is interesting.

I think both of those cases are practicality reasons. As it is Rory spends hours in makeup and you would probably need a small bit of CGI to make it look like Dinklage is missing his nose. In the books for example Rorge (I think) has no nose at all, that's not in the show. Dagmer Cleftjaw's jaw is actually split down to the middle, in the show he has a small scar on the side of his face. Etc.

Oh, for sure. I was mostly being impish.

(That reminds me that the CA:FA has a behind the scenes thing about how they made Red Skull noseless. It was nifty.)

To be fair, they were probably saving themselves a make-up disaster over the seasons. These things are hard to get consistently right over several seasons, also too much make-up limits actors in facial expressions.

So glad he got to keep his nose. At the end of season two I did a whole mini-farewell to it, and lo and behold post-Blackwater it remained!
