Vegetable oil and water or possibly softened butter. Or I'm sure you can use eggs without trouble. I've never actually heard of somebody getting sick from cookie dough.

Yeah I've never gotten sick and I've had a LOT of cookie dough. Sometimes I would buy a pack of the stuff at work and just go through it during the week.

Pasteurized eggs also exist! I know this because you can buy cookie dough made with them (because the manufacturers wised up to the fact that people basically just buy cookie dough to eat it raw). I'm not sure where you can buy pasteurized eggs, but I know they are a thing.

However, I always just eat cookie dough even if it has raw regular eggs and it's never caused a problem for me. :P

Oh, another possibility: "egg beaters". I've never tried them bc they seem kinda gross for just straight-up scrambling and pretending they're eggs, but I know some vegan recipes use them for baking and I imagine they'd have the right consistency to make the dough what it's supposed to be.
