Yeah I've never gotten sick and I've had a LOT of cookie dough. Sometimes I would buy a pack of the stuff at work and just go through it during the week.

However, I always just eat cookie dough even if it has raw regular eggs and it's never caused a problem for me. :P
Oh, another possibility: "egg beaters". I've never tried them bc they seem kinda gross for just straight-up scrambling and pretending they're eggs, but I know some vegan recipes use them for baking and I imagine they'd have the right consistency to make the dough what it's supposed to be.
