When my hair was that long, I used to tie it in a high ponytail with an Ouchless band, then tie the ponytail into a knot at the base of the tail, wrap the rest around the knot and secure the whole thing with another Ouchless band.

For braids... well, there's always the Princess Leia one, but I never figured out how to do that.
