It's totally possible to do at hip length, though you may need to fiddle with how you cross them.
- a crown braid will also work, but it may or may not fit under your hat, depending on how loose your hat is. If it's no go, try milkmaid braids instead.

Some are more complicated than you want, but there are several plain buns you can probably fit below your hair (nautilus buns, and infinity buns off the top of my head, maybe knot buns. She uses a lot of hair sticks, but you can hold those with pins as well).

I do it with two and one braids, and it does not move. Ever.
