I have thick, straight hair that goes past my hips, and recently I've figured out the only effective way I've ever worked out to secure my hair in a bun. I don't know if it quite meets the parameters you need, but here's what I do.

First, I braid it. Then I twist the braid into what would be a bun if I had shorter hair, but ends up in kind of a long knob with my hair. I fold the knob up against my head, and take a sharpened pencil/skewer/hair stick and basically staple it in place, by passing the stick through the hair on my scalp on one side, through the braid-bun, and through the hair on the other side. It's sturdy enough that it'll stay up all day, shaking my head vigorously, etc. I don't know how it'll work with your hat needs, but otherwise it should do the job.
