Re: Diet questions
(Anonymous) 2014-08-20 11:47 pm (UTC)(link)what kinds of spicy dishes are you into? I'm good at cooking jambalaya and chili, maybe I can transcribe my recipes.
at the very least, cooking doesn't have to be gross if you don't want it to. there are proper ways to salt/spice vegetables so they taste delightful, and not over-cooking them helps. plus, some vegetables actually retain their nutrients better when raw, so there's nothing wrong with eating raw vegetables or mixing them into a nice pasta salad.

(Anonymous) 2014-08-21 01:04 am (UTC)(link)I'm not into cooked greens either, my green veggies are usually along the lines of bell peppers, zucchini, and such. It's really super-easy to add vegetables to chili and curry both, usually balance the greens with some carrots, onions, celery, etc. Use zucchini and other squashes in place of potatoes, you just have to take care when to add them so you don't over-cook them. And, there's a reason bell peppers, onions, and celery are nicknamed the holy trinity of all Cajun cooking - they go in everything and with everything, and bulk out recipes nicely without changing the texture of the dish.
