I like chili, curry, and... some things I don't remember the names of. I don't usually like cooked "greens" or anything like it, but I had some from the Ethiopian restaurant that I liked (but I don't remember the name of the dish). I like vegetables in Thai curry and some Burmese dishes that I don't have the names of right here (we have a Burmese restaurant near my house).

ooooh you have good taste.

I'm not into cooked greens either, my green veggies are usually along the lines of bell peppers, zucchini, and such. It's really super-easy to add vegetables to chili and curry both, usually balance the greens with some carrots, onions, celery, etc. Use zucchini and other squashes in place of potatoes, you just have to take care when to add them so you don't over-cook them. And, there's a reason bell peppers, onions, and celery are nicknamed the holy trinity of all Cajun cooking - they go in everything and with everything, and bulk out recipes nicely without changing the texture of the dish.

Zucchini, bell peppers, carrots and celery are all right, but they don't match the nutrition of leafy greens. (By which I mean dark leafy greens, not, for example iceberg lettuce.)

If it was Ethiopian, it was likely Gomet Wat, basically collard greens. Tons of recipes online for that:
