When I was MUCH younger I used to regard things like hemp hearts, kefir, flax seed etc as dumb hippie food. I absolutely love them now, though.

A lot of the stuff I used to think I didn't care for (asparagus, spinach, turnip, kale, tofu...) was actually the result of it being prepared poorly. These days I have a rule of trying something three times in three ways before deciding I don't care for it.

Very good idea, IMO. I find that most peoples' dislike of vegetables stems from previous bad experiences with improper preparation. Buuuut then you meet people who go ballistic you because OF COURSE they've tried ALL THE VEGETABLES in different ways and still hated them, you food nazi, etc. etc. I shrug and feel sorry for them, because their health will definitely suffer, but eh, what can you do.

In my experience, you can encourage them to try them anyway. I have had great success with changing people's dietary habits from what I'd term destructively limited to being able to eat and enjoy a wider range of foods simply through offering a choice of preparations and not being personally offended if they didn't like it.

You can really accomplish a lot if you work with people to find solutions that suit their tastes. Adding spinach to fruit smoothies, for example, is something I often suggest to people who claim they can't stand the taste of anything green.

Hey, it's possible. There's stuff I'll never touch - but then there's stuff I did indeed learn to appreciate because someone prepoared it differently than my mom or grandma used to.

I can't believe I ever disliked broccoli, I don't know what my mom did to the poor vegetable, but it was horrible.
