Personally, I've always preferred what used to be called 'unconventional couples' (I've been in fandom a long time). It's always seemed more fannish to me to take two people who don't have a relationship in canon, put them together, and write fic about them.

If I want to see the canon couples interact, then I can consume canon for that. It's much less fun for me to explore things that have already been set in stone that way, because you're always aware that you're going against the "official" line.
When it comes to non-canon couples (whether it's slash or het)then there's so much more to explore and play the "what ifs" with. Usually, much less has been stated concretely about how their relationship would play out, so there's much more material to play with as a fanficcer.
