Re: "Fantasy"/Epic music
Prokofiev's ballets have wonderful music; my fav is Romeo and Juliet (I have nearly 20 different recordings of it (it's amazing how differently each conductor can interpret the same piece).
I also like a lot of what the Yoshida Brothers have done over the years: one of their pieces, "Kodo (Inside the Sun Remix)" was used in Nintendo commercials and can really get you bouncing.
For epic you might also poke at Mussorgsky ("Great Gate of Kiev" from Pictures at an Exhibition is one I personally never get tired of) or Holst's The Planets.
