That's like asking why you like the tv shows, movies and books that you like, then?
I can understand canon shipping more than non canon shipping, actually
With canon, you like the couple that exists in the source material and makes you feel something so you want MORE of that you want more of that couple and want to fill the spaces, make a sequel to their story, know what happens in the moments not described and not on screen. Fanfictions for canon couples had always existed, there were ones about Darcy and Elizabeth because even back then, 'fabs' wanted more of the thing they liked. Why you think people make sequels?

With non canon ships or crack ships they often go completely against canon and the characters or you have to change so many things to justify the ship that I wonder if it wouldn't be easier for people to write their own characters and stories. What's the purpose of watching something or reading books if you always end up changing what the author has created?
There are people who automayically ship unconventional couples in everything just for the sake of going against the author and feel like they know their characters better than them.
Honestly , if I were a writer I don't think I'd like people rewriting my stories and characters to the extent I can't recognize them anymore and all my messages and methaphors and the things that might be autobiographical are lost.
If I were a writer I think I'd love it if people got my story and characters.

If you were a writer, you'd have to get over that pretty quick, because once your piece is out there, you can no longer control how people perceive it or what they think about the world and characters.

Also, wrt non-canon ships, not all non-canon shipping involves completely changing characters. A lot of the time, people ship a non-canon pairing because they like the dynamic between the two characters and see chemistry between them, and they'd like to see them take that further.
