Eh, I don't think wish fulfillment is the right word. Not all the fics I write are things I wish had happened in canon, in fact, most of them aren't. They're just imaginative what-ifs.

I also don't know why people act like their pairings are better than others', but not all fanfiction is pairings. Do you mean all ships are wish fulfillment? Also not the case always for me, since I often write pairings I don't "ship", like in non-con scenarios and such.

I kind of see where OP is coming from because even if you don't want the thing to happen in canon, you still desire to read about it; it still appeals to you on some level and gives you something the canon doesn't, you know? I've certainly read and enjoyed fic for stuff I would never want to become canon, but the fic satisfied a need I had, sometimes separate from canon. (That probably makes no sense as I'm shit at explanations.)

But I do agree that people who are hostile to others for shipping and have some odd sense of superiority because of it are unpleasant. It's silly to get that worked up over what other people like.
