Cucumber recipes?

I have come into the possession of three medium length cucumbers and I really would hate to waste them. Anyone have ideas for recipes that don't involve green salads or Mediterranean-style dishes (nothing against those, but I've done it that way too many times).

I've only ever done quick pickles with cucumbers (usually do carrots with them as well), but chopped up, they're nice as a sandwich garnish or side dish. Regular slices, also on sandwiches with cream cheese or even just butter and salt.

My extended family uses them in raita (Indian condiment served on the side of spicy dishes). There's a lot of recipe variants!

I also use them to flavor water, and they can be used in simple cocktails.

Asian Pickled Cucumbers

1 cucumber, peeled and sliced thinly
1 Tbsp. salt
1/4 cup rice vinegar
2 Tbsp. sesame oil
1 tsp. sugar
1/4 tsp. red pepper flakes (optional)

Sprinkle the salt over the sliced cucumbers and let sit for 15 minutes. Rinse off the cucumbers thoroughly and drain. Meanwhile, mix together the remaining ingredients and pour over the sliced cucumbers and stir. Marinate several hours or overnight.

I cut out the middle seedy part if they're big, dice them, and add them to potato salad. Instead of using mayo, I strain the liquid out of full-fat plain yogurt, and add dill, mustard seeds, chopped celery, red onion, and bell pepper. Maybe some lemon juice, dijon mustard, or cayenne. It keeps longer than regular potato salad since there's no mayo.

Or you could stick them in the fridge and then blend them up with ice and mint, maybe some lemon and sugar, if it's hot where you are. Maybe add seltzer. Try it with half watermelon.

I've considered that too, but I'm out of wrappers. I guess I'll go chirashi or something.

Seaweed salad:

1/4 cup of dried wakame seaweed, soaked in 3 cups water
1 whole cucumber cut into very thin slices
1 tbsp. soy sauce
1 tbsp. fish sauce
1 tbsp. rice wine vinegar
Korean red pepper flakes- optional
sesame oil- optional

Soak wakame for 5 minutes or until fully rehydrated and drain thoroughly, squeezing out excess water. Combine soy sauce, fish sauce, vinegar, and red pepper flakes. Toss wakame and cucumber slices together with dressing. If using sesame oil, sprinkle salad with a quarter teaspoon and toss to coat. If not serving immediately, refrigerate for up to 5 hours.

Sometimes I also like to add black sesame seeds for an extra crunch. It makes a very nice side dish for Korean or Japanese dishes.

Huh. Never even thought of attempting seaweed salad. I also have most of these ingredients, though running low on the seaweed.

I was never a fan of seaweed salad until I thought of putting cucumber in it. Which is unfortunate because it's incredibly nutritious stuff and everyone should be eating more of it, especially vegetarians.

I really like how this comes out though, because everything gets a little pickled and I LOVE PICKLES HOLY SHIT. Pickles might be my favorite food next to raspberries.

Also the good thing about this salad is it keeps for a while and the flavour just gets better. I usually eat it straight away but you can seal it in a container and it's good the next day.

Garlic cucumber is delicious. Just finely slice garlic and some cucumbers. Lovely with soy beans too.

Cucumber water! So awesome on a hot day.

Or you could do some gazpacho?

6 -8 juicy tomatoes
1 large chopped onion (white or red)
1-2 cucumbers, chopped
salt
black pepper
virgin olive oil
lemon juice
fresh basil (or cilantro)
2 cloves of garlic (or however much you wanna add)

OPTIONAL: croutons (or just regular white bread on the side), tabasco

Mix 1/3 cup olive oil and lemon juice -> use a blender

Add vegetables and seasonings

It's ok if the soup has some chunks!
Add more salt, pepper, oil and basil to suit your taste.

Serve cold.

OP said they don't want Mediterranean recipes, so presumably tzatziki is out, as is the horiatiki salata that we make at home with tomatoes, red onions, cucumbers and feta, dressed with olive oil and wine vinegar and flavored with oregano or fresh mint.
