Re: Cucumber recipes?
1/4 cup of dried wakame seaweed, soaked in 3 cups water
1 whole cucumber cut into very thin slices
1 tbsp. soy sauce
1 tbsp. fish sauce
1 tbsp. rice wine vinegar
Korean red pepper flakes- optional
sesame oil- optional
Soak wakame for 5 minutes or until fully rehydrated and drain thoroughly, squeezing out excess water. Combine soy sauce, fish sauce, vinegar, and red pepper flakes. Toss wakame and cucumber slices together with dressing. If using sesame oil, sprinkle salad with a quarter teaspoon and toss to coat. If not serving immediately, refrigerate for up to 5 hours.
Sometimes I also like to add black sesame seeds for an extra crunch. It makes a very nice side dish for Korean or Japanese dishes.

I really like how this comes out though, because everything gets a little pickled and I LOVE PICKLES HOLY SHIT. Pickles might be my favorite food next to raspberries.
Also the good thing about this salad is it keeps for a while and the flavour just gets better. I usually eat it straight away but you can seal it in a container and it's good the next day.
