You need to switch to British style chips instead of fries, people want fresh fries all the time because they go stale so quickly. They are too thin to hold heat and flavour, if they are more than a minute or so old they are no good. Now proper British chips, they hold their flavour and heat, and even benefit from resting in the heat cabinet for ten minutes or so.

You're right that in the sense that within a minute after coming out of the fryer, they will basically taste a bit mushier (though no, they are hardly "stale" - which makes it even more funny why people want to order fresh batches. By the time they sit down, they might have maybe two fries that are really hot and crispy, and then they'll all taste the same.
