I think it is polite to unfollow somebody if they ask.

Honestly? Maybe they're being overdramatic, but I can see why people care who follows them. If I have a personal history, or a personal reason to feel uncomfortable with someone (I know you said your interactions were pleasant - but heck, who knows what is going on in their mind), I don't like knowing said person is seeing this thing I do for my own enjoyment; something personal to me.

On a site like tumblr where anyone can see your stuff, privacy doesn't mean much, I know. There are ton of faceless followers I have, who I would probably be uncomfortable with if I knew them better. Still, if I had an open line of communication with them, realized there was a reason I wanted them to unfollow me, I would ask.

Also, a lot of underage bloggers feel uncomfortable with adults following them, too, if age is a factor here. Again, personally I understand at least. (I myself am not comfortable following minors - I don't want to see a 15 year old squeel about their sexual fantasies, no thank you sir).

The user can block them, though and get exactly that. This is literally the kind of thing you say just to be hurtful, not to protect yourself.

I think ayrt should unfollow because who needs that kind of person in your life, but for their own sake, not that user's, or possibly just good manners.
