Exactly my thoughts.

The father taught her "conceal it don't feel it" which basically amounts to teaching her to control her emotions and not freak out everytime she ices something.

Years later Elsa has turned it into "conceal, don't feel"

Removing the "it" changes the entire meaning. Her dad was talking about reacting to the ice, she is talking about her feelings.

At the end of the day, they were trying to teach her to control her emotions and I would bet that once she learned to they would have become more open and talked to Anna about it. Honestly I get the idea Elsa never got over her guilt for what happened to Anna. Her parents didn't blame her they understood she was a child. But she seemed to have never forgiven herself, and that's why her first move when the incident at the coronation happened was to remove herself and isolate herself.

Except sh never freaks out over icing things until she hurts her sister by accident and her parents freak out rather than reassure her and tell her it wasn't her fault, it was an accident, and encourage her to overcome her sudden new fear of using her powers. She was using her powers fine before the bad timing that got her sister hurt.

Okay one. Of course she freaks out after the accident. That was the first time she saw her powers do something seriously dangerous and not fun. Up until then her powers had seemed all fun and games and happy. Her parents freak out because she's freaking out and the ice is going everywhere. (at on point I recall her father trying to tell her to calm down and her being frantic).

There was a whole bunch of scenes where the father was working with her to help her learn to control her powers. In fact I saw more of her parents trying to work with it. Because they're human they did freak out a little bit, but at no point did I see them turn and take it out on Elsa.

They were trying to find a solution to an admittedly thorny situation the best that they could.

Also as for the isolation argument. They just separated the sisters into different rooms after the accident. Elsa reacted by isolating herself from Anna until she figured her powers out, because she still felt guilty.

"bad timing"

Except to be honest, Elsa did (accidentally) somewhat cause it. It was an accident, unfortunate, she did technically still have some part in. I wouldn't fault her for it because she was a child, but it was basically a super-powered instance of "accidents happen".
