Useful: A mini chopper. I live by this thing for chopping nuts and since I bake a lot it's the best thing ever.

Useless: Ice cream maker. When I use it, it's great. But it takes up a lot of room in the freezer or in storage. I got it as a freebie for signing up for something, so I don't feel too bad about it. The ice cream never came out right, but we would make sherbert or sorbets that were really good.

I love my ice cream machine! I just wouldn't call it useful, per se, because it's not something you really need or will use. It also helps that I have a chest freezer, so space isn't as much of an issue. I'm spoiled by homemade ice cream now, most commercial ice creams taste terrible to me. :(

I could never get the ice cream to come out right when I used my ice cream maker.

Now sorbet? I loved the fresh fruit ones I'd make, nothing like it.

Hmmm, what went wrong for you? I had a basic Cusinart ice cream maker and a few things that really helped me was:

1) Be sure to chill mixes overnight if you're using a cooked custard base.
2) Check the machine after 15-20 minutes. It should be the texture of slightly runny soft serve. Longer than 25 minutes is usually no good because the freezer canister gets too warm. Also if it runs too long you end up with bits of butter in the ice cream.
3) Ice cream needs to harden overnight for the best texture.

I have the Cuisnart one. I've never done a cooked custard base before, so that's definitely not the problem.

Do you mind sharing some of your successful recipes?
